The transaction, which closed August 31, allows the pizza chain to take direct control of two established outlets that helped validate its tavern-style "bar pie" model. CEO Carl Bachmann, a veteran of the Long Island restaurant scene with a history of scaling regional portfolios, stated that the acquisition provides a foundation for further investment in Nassau and Suffolk counties. Both restaurants will remain fully operational during the transition.
Looking beyond these existing sites, the company is preparing for further expansion in the region. Riko’s has already announced plans to open a new location at the Shops at SunVet in Holbrook, New York, in 2027. This move follows a period of rapid growth for the brand, which currently operates 13 locations across four states. By consolidating its Long Island presence, Riko’s intends to leverage its existing customer base to fuel a more aggressive growth strategy across the East Coast.
