The acquisition of the GEN Korean BBQ portfolio, which includes four additional development sites, marks a pivotal shift for the Los Angeles-based company. Chubby Group intends to phase in the transition over 12 months, beginning in November 2026. Under the new ownership, these locations will be rebranded as GEN X—a wagyu-focused evolution of the existing concept—or integrated into the firm's broader Chubby Club ecosystem. To facilitate this expansion, GEN Restaurant Group will receive a note convertible into Chubby Group equity at a $1.5 billion valuation.
Chubby Group’s strategy relies on a vertically integrated supply chain that bypasses traditional distributors. By sourcing whole animals and managing internal seafood programs, the company claims it can increase unit revenue at acquired sites by up to six times. This operational efficiency supports their membership program, which currently serves 450,000 members. With systemwide revenue projected to hit $400 million in 2026, the firm plans to leverage the new capital to open 30 additional locations across its Mr. Chubby and Chubby Bowls brands throughout 2027.
