The implementation marks a shift in how the supermarket giant handles carcass balancing and production deployment. By ingesting operational data into the Ever.Ag system, Coles has compressed planning cycles from several hours to mere minutes. The platform enforces business policies consistently across categories, effectively digitizing institutional knowledge that previously relied on individual expertise.
Ever.Ag CEO Scott Sexton noted that the complexity of meat retail demands data science at scale to maintain real-world operations. For Coles, the project has already yielded measurable gains in planning accuracy and customer responsiveness. Executive General Manager Martin Smithson emphasized that the primary goal remains ensuring consistent availability of fresh cuts at competitive prices.

This next stage aims to integrate profitability metrics and environmental impact variables, allowing the retailer to simulate market fluctuations and refine its inventory management under varied economic conditions.
