The National Restaurant Association’s 2026 Restaurant Beverage Trends report highlights this evolution, noting that 87% of full-service operators now view beverages as a primary traffic driver. For younger demographics, the appeal lies in discovery; 71% of Gen Z and millennials seek out flavor experiences that are difficult to replicate at home. This demand for novelty has pushed operators to diversify offerings, with limited-service venues leaning into coffee, smoothies, and wellness-focused drinks, while full-service establishments expand their portfolios of both craft cocktails and non-alcoholic alternatives.
Beyond in-house dining, the industry is eyeing delivery as a major untapped frontier. Currently, beverage attachment rates for off-premises orders remain low, but 83% of delivery customers indicate they would order drinks more frequently if packaging were more reliable. For operators, the challenge lies in balancing this consumer appetite for customization with the logistics of transport. By treating the cup as a destination rather than an accessory, restaurants aim to capture afternoon demand and build deeper engagement in a highly competitive market.
