The initiative aims to elevate the humble Baltic herring, a staple of Finnish domestic cuisine. Chef and restaurateur Luka Balać, who spearheaded the collaboration, worked with ten kitchens to design unique plates that range from smoked and grilled to fermented and caramelized preparations. Participating venues include Aoi, Elm, Finnjävel Sali, Gastro Cafe Kallio, Klaava, Maukku, Nokka, Nolita, Nolla, and Sake Bar & Izakaya. Each establishment will feature its creation through October 10, utilizing seasonal harvest ingredients to bridge the gap between late summer and autumn flavors.

Beyond the restaurant menus, the project introduces a competitive element to the tradition. Judges from the Gastronomic Society of Finland are slated to visit every participating kitchen to evaluate the dishes. The winner will be crowned on October 4, the opening day of the main Herring Market at Market Square. While the market itself remains one of the country’s longest-running public events, organizers view this restaurant expansion as a vital step in keeping the maritime culture relevant to contemporary diners. The full program for the week-long festivities at the square will be available starting September 16.
