Precision-fermented ovalbumin currently leads the sector, capturing 56.1% of the market share in 2026. This technology allows producers to maintain identical protein behavior across batches, a critical requirement for large-scale bakery operations, which account for 38.0% of total demand. While liquid formats dominate current supply chains due to their ease of integration into existing kitchen infrastructure, the industry faces ongoing hurdles in navigating diverse international regulatory frameworks for novel foods. Singapore and the Netherlands are currently spearheading global growth, fueled by supportive pre-market approval processes and advanced food-processing logistics.
